Our contemporary pizzas are born in Catania, but they have a soul that looks far beyond. They rise for thirty-six hours, following their own rhythm, the right one. We use biga, a pre-ferment that gives them unique taste and aroma. Type 1 semi-wholemeal flour and sprouted grain, crafted with precise techniques and timing, create a light, fragrant, and melt-in-your-mouth dough.
